Tuesday Refreshment

I know it’s Friday, but I want to talk about Tuesday for a minute.

The boys and I had such a refreshing dinner Tuesday evening. The two oldest little guys had field day at school and that means Aron and I had field day too. Aron joined right in the competition with Ivan’s first grade class and had so much fun.

We went straight to lunch and then straight to karate. Needless to say, by the time we got home a little after 2:00 we were all pretty hot, sweaty and tired. I made the boys get their baths spend some time cleaning up toys and such, and then a little later I made our early dinner. I had planned on smoothies and roasted sweet potatoes, but I had a sudden craving for strawberries and lime. So I put together a little somethin’ somethin’ and I enjoyed it so much, I thought I’d share it here.

I used something somewhat close to these things…I may be a little off so just go with your gut if you try it…really…it may not be exact…or it might be:

juice from four limes
about 9 large frozen strawberries
1 cup of yogurt (I had a little plain and a little vanilla so I just used both)
2(ish) cups of almond milk
&
3 tablespoons of honey

I strained the lime juice and then blended all of that up for the boys and I. It was really refreshing and yummy.

In case you’re interested in the sweet potatoes too, here’s how I made them. Honestly this is probably on the top 10 list of things I like to eat.

I peeled and sliced one large sweet potato, then laid the slices out as evenly as I could on a lightly oiled baking sheet. I drizzled a little oil over the top of them and then sprinkled them with salt, pepper, onion powder and sage. I baked them in a 375 degree oven for 15 minutes on each side, or until they start getting a little dark. Truly the baking time is totally up to your preference. They soften quickly and they are good just like that, but then you can bake to different stages of caramelization or down right crispiness.

It made for a very light dinner and since we ate fairly early, I did give them some toast with honey a little later while they watched a movie. They were happy campers though and went to bed with smiles on their faces.
